The RODAC contact method and the determination of three different microbial parameters (aerobic mesophilic colony counts, Micrococci/Staphylococci and Enterobacteriaceae) turned out to be appropriate for the calculation of hygiene scores and the registration of the hygiene levels in food stores. In spite of the high contamination of the areas studied, the RODAC contact method permitted to determine differences regarding the hygiene level of the shops studied and to assess them. Training of personnel and technical measures (e. g. avoidance of liquid films, usage of disposable cloths, weekly disinfection) need to be employed in order to reduce microbial contamination in those food stores with a low hygiene profile.
