Measures for minimization of the human health hazard from tissues from cattle infected with BSE are discussed, with special reference to the hazard from variant CJD. Topics considered include: regulations for high risk tissues; the safety of muscle meat, milk and dairy products; possible contamination of offal with central nervous system material; brain tissue; spinal cord tissue; mechanically separated meat products; extracerebrospinal ganglia; and the need for modifications to slaughter technology
