    Abstract / Zusammenfassung

    Numerous autonomic nervous system ganglia in the head of cattle lie partially within the skull but partially outside it, covered by muscle. The possibility that these might be included in edible meat recovered from the skull is considered. It is concluded that most of the ganglia would, because of their position or small size, not be recovered during mechanical removal of meat from cattle heads; however, the cranial cervical ganglion, which is located in the ventral region of the skull, would be completely or partially recovered and might be present in the recovered meat/fat material.
