The possibility that the vagus nerve is a risk material for BSE in cattle carcasses and beef is discussed. Topics considered include: the probability that the vagus nerve may be a route of transmission of the BSA agent from the gastrointestinal tract to the brain; the potential hazard from nerves joining the gastrointestinal system to the central nervous system; and measures to minimize this hazard in cutting of cattle carcasses. These measures include: decapitiation in manner which leaves cell bodies of parasympathetic origin attached to the skull; removal and discarding of fat tissue in the neck region; discarding the oesophagus as non-edible; and discarding fat and connective tissue trimmings from thoracic viscera
